Chirbuli in Adjara
Origin of the recipe
The classic Georgian chirbuli omelet is reminiscent of Jewish shakshuka—both fried eggs are fried in a thick, aromatic tomato sauce with spices. However, Georgian omelets are distinguished by their use of traditional spices, and the classic recipe always includes walnuts.

Step-by-step recipe
Step 1:
Place walnut kernels in a bowl, cover with hot water and leave for 10 minutes.
Step 2:
Cut the onion into thin half rings.
Step 3:
Peel the skins off the nuts.
Step 4:
Melt the butter in a frying pan, add the onion and fry for 4-5 minutes over medium heat.
Step 5:
Chop the nuts.
Step 6:
Add chopped tomatoes, salt, saffron, red pepper, and utskho-suneli to the pan. Stir and fry for 2 minutes over medium heat.
Step 7:
Add water, stir and bring to a boil.
Step 8:
Add nuts, stir and cook for 2 minutes over medium heat.
Step 9:
Place the eggs with whole yolks in a bowl, making a small space for them. Season each egg with salt and pepper.
Step 10:
Cover and cook for 4-5 minutes over medium heat.
Step 11:
Chop the garlic, cilantro and parsley, add to the pan and remove from the heat.
Cooking tips
If you do not remove the skin and hard fragments from the walnut kernels, the nuts will be too bitter and crunchy on your teeth.
Use butter to fry the onions so they don't burn.
The spice utskho-suneli – ground fenugreek – can be purchased online.
