Goose stuffed with buckwheat
Step-by-step recipe
Step 1:
Prepare the goose: rub it with salt, pepper and spices on all sides.
Step 2:
Prepare the filling: boil the buckwheat until tender. Add honey and soy sauce and stir.
Step 3:
Fill the goose cavity with cooked buckwheat.
Step 4:
Tie the bird's legs with thread to prevent the filling from spilling out.
Step 5:
Place the goose in a roasting bag and tie it shut.
Step 6:
Place the bag in a baking dish.
Step 7:
Bake the bird in the oven at 170°C for 2 hours.
Step 8:
Remove the goose from the oven, cut open the bag and put it away.
Step 9:
Mix soy sauce and honey in a separate bowl. Brush the bird with the resulting sauce.
Step 10:
Bake in the oven for another 10 minutes.
Step 11:
Serve the goose with garnish.
Cooking tips
If you want a crispier crust, increase the oven temperature for the last 10 minutes.
To enhance the flavor, you can add a little marinade to the baking dish.
Don't overdo it with salt, as soy sauce already contains salt.
Serve the dish immediately after cooking, while the goose is hot.
You can use other sauces instead of soy sauce.
For variety, make several filling options: with apples or vegetables.
