Cabbage with rice Lahanarizo
Origin of the recipe
This national dish in Greece is prepared both on regular days and during Orthodox Lent. Its name translates simply as "cabbage and rice," and the dish itself may seem equally simple, but simple doesn't necessarily mean tasteless. Even a Lenten version of lachanorizo, without meat or poultry, can be a true delight!

Step-by-step recipe
Step 1:
Shred the cabbage, cut the onion into half rings.
Step 2:
Pour vegetable oil into a saucepan, heat and fry the onion for 4 minutes over medium heat.
Step 3:
Finely chop the carrots and add them to the pan. Stir.
Step 4:
Add cabbage to the pan, stir, cover and simmer for 5 minutes over low heat.
Step 5:
Mix and add pureed tomatoes, sugar, salt, black pepper, and lemon juice. Mix.
Step 6:
Add rice and stir.
Step 7:
Add water, stir, bring to a boil, cover and cook for 20 minutes on low heat.
Step 8:
Stir and serve sprinkled with parsley.
Cooking tips
For cooking, use a saucepan or a pot with a thick bottom, since the ingredients are fried in it.
Rinse the rice thoroughly until the water runs clear.
