Origin of the recipe

Tawa is an Indian dish from Punjabi cuisine. Like many dishes of this cuisine, the meat is cooked in a yogurt sauce with traditional spices. This dish is cooked in a special concave pan, also called a tawa, but a regular flat pan will do. We suggest making tawa using chicken thighs.

Step-by-step recipe

Step 1:

Chicken Tawa - Step 1 Pour a tablespoon of olive oil into a flat frying pan and melt the same amount of butter.

Step 2:

Chicken Tawa - Step 2 Add chopped ginger and garlic, whole cumin and fry for 1-2 minutes, stirring.

Step 3:

Chicken Tawa - Step 3 Place the chicken thigh meat, cut into small pieces, into the pan and stir until it turns white.

Step 4:

Chicken Tawa - Step 4 Add salt, chili powder, turmeric, cumin powder, coriander powder, garam masala, fenugreek.

Chicken Tawa - Step 5 Sprinkle the meat lightly with lemon juice and mix thoroughly.

Chicken Tawa - Step 6 Cut the tomatoes into small cubes and the green chilies into rings and add to the pan.

Cooking tips

Remember to stir constantly when cooking without a lid, otherwise the meat will dry out or burn.

For this dish, use natural yogurt without additives, Greek yogurt is fine.

If you don't like food too spicy, adjust the amount of chili to suit your taste. Keep in mind, however, that authentic Indian dishes are usually quite spicy.
