Step-by-step recipe
Step 1:
Mix flour and salt in a bowl. Add warm water and 2 tablespoons of vegetable oil.
Step 2:
Knead the dough, cover with film and set aside for 15-20 minutes.
Step 3:
Finely chop the spinach and mint.
Step 4:
Heat 2 tablespoons of vegetable oil in a frying pan. Chop the onion and fry it in the pan until golden brown.
Step 5:
Add the onion to the bowl with the spinach, season with salt and pepper. Add the paprika and stir.
Step 6:
Sprinkle flour on a flat surface and cut the dough into about 25 small pieces.
Step 7:
Roll the resulting pieces into balls and cover with film.
Step 8:
Roll out the dough ball very thinly, so that it is larger than the palm of your hand.
Step 9:
Place the filling on the dough and fold it over itself like a book. Seal the edges and carefully trim off any excess, preferably with a decorative knife.
Step 10:
Cook in a dry frying pan on each side until golden brown.
Step 11:
Place new portions in the pan, one on top of the other, grease with oil and cover with a lid.
Cooking tips
For green stuffing, any greens and herbs can be used - spinach, dill, parsley, sorrel, tarragon, basil, tarragon, green onions and cilantro.
When rolling out the dough, use less flour, otherwise it will burn and smoke when frying.
If the dough has dried out a little and the edges do not seal well, you need to moisten them with a slightly beaten egg or water.
