Funeral kutia is a ritual dish known since ancient Greece. In ancient times, this funeral dish was made from wheat or barley, but today it is most often made with rice, sugar, raisins, and honey. Step-by-step recipe
Step 1:
Rinse the rice thoroughly, place it in a saucepan, and add enough water to cover the rice by about an inch. Add a little salt, if desired.
Step 2:
Bring the rice to a boil, covered, reduce heat to low and cook until done.
Step 3:
Rinse the cooked rice under cold running water.
Step 4:
Place the rice on a towel and spread it out to remove excess moisture.
Step 5:
Rinse the raisins and place them on a towel. Dry them together for an hour and a half.
Step 6:
Place raisins and rice in a bowl, add sugar and stir.
Cooking tips
Cook the rice until the water evaporates, then taste it. If the rice is still a bit raw, add a little water and let it evaporate again, covered.
Rice should not boil vigorously during cooking.
