Mordvin pancakes with semolina
Origin of the recipe
Mordvin pancakes differ from classic ones in that they contain semolina, not just flour. This gives them an incredibly thick, fluffy texture with a characteristic porous interior. They're the perfect treat for a family breakfast or holiday table, sure to please all your guests.

Step-by-step recipe:
Step 1:
In a large bowl, combine semolina, yeast, sugar and salt.
Step 2:
Add hot water and mix well until smooth.
Step 3:
Cover the bowl with cling film and let the dough rest for 1 hour.
Step 4:
After the semolina has swelled, add boiling milk and stir well again.
Step 5:
Add eggs and mix until smooth.
Step 6:
Add vegetable oil and stir again.
Step 7:
Cover the bowl with cling film and let the dough rise for another 15 minutes.
Step 8:
Heat the frying pan and pour a portion of the batter into it.
Step 9:
Fry the pancake over medium heat until golden brown on one side.
NOTE: At this stage, cover the pan with a lid - the pancakes will cook more evenly and will be fluffier.
Step 10:
Carefully flip the pancake with a spatula and fry the other side.
Step 11:
Place the finished pancake on a plate and brush with butter. Repeat steps 8–11 until the batter is used up.
Step 12:
Serve Mordvin pancakes hot with sour cream or jam.
Cooking tips
For a better dough consistency, be sure to use hot water—this will help the semolina swell faster.
Don't skip the "rest" and "rise" stages - this will allow the yeast to activate, and the pancakes will turn out fluffy.
When frying, use medium heat - too high heat can cause burning.
Before each new pancake, grease the pan with vegetable oil - this will prevent sticking.
Don't open the lid if you're using one. The lid helps the pancakes cook faster, but you should only open it when the pancake is almost done.
Keep the finished pancakes warm. Cover them with a napkin or lid to keep them warm and soft.
Sweet pancakes go great with chocolate or caramel sauce!
