Step-by-step recipe
Step 1:
Cut the eggplants into slices.
Step 2:
Also cut the mozzarella into slices and place one slice between two eggplant slices to make “sandwiches”.
Step 3:
Place flour in a bowl, add mustard, plant-based milk, garlic powder, salt, and pepper. Mix.
Step 4:
Place breadcrumbs, yeast flakes, paprika, and black pepper in a clean bowl. Mix well.
Step 5:
Dip the eggplant and cheese thoroughly into the liquid mixture, then roll in the dry mixture.
Step 6:
Separate the broccoli into florets and steam until half-cooked – about 5 minutes.
Step 7:
Pour 2 tablespoons of olive oil into the frying pan, add broccoli, salt, pepper and fry, stirring.
Step 8:
Add 2 lime slices and sauté the broccoli and lime over high heat until golden brown.
Step 9:
Pour vegetable oil into a clean frying pan and fry the eggplants over medium heat on both sides.
Step 10:
Place the eggplant and broccoli on plates and serve.
Cooking tips
Turn the eggplants occasionally to prevent them from overcooking. It's best to use two spatulas to turn them over so the sandwiches don't fall apart.
Place fried eggplants from the pan on paper towels to remove excess fat.
