Chinese Damahua Donuts
Origin of the recipe
Chinese cuisine doesn't have many baked goods, and those that are baked are steamed or fried. Besides a variety of rice cakes and pastries, there are also more familiar doughnuts made from wheat flour, albeit in a very unusual shape – a double braid. In our country, these doughnuts are made by the Dungans, a Muslim people originally from China.

Step-by-step recipe
Step 1:
Pour warm boiled water into a bowl, add vegetable oil, granulated sugar, soda and mix well until the sugar dissolves.
Step 2:
Add flour and knead into a soft dough.
Step 3:
Place the dough on the surface and knead for 5 minutes.
Step 4:
Return the dough to the bowl, cover and let it rest for 15 minutes.
Step 5:
Knead the dough again, cover and let rest for another 10 minutes.
Step 6:
Divide the dough into two parts and roll into sausages.
Step 7:
Cut the sausages into small oblong pieces and roll them into thin strips.
Step 8:
Place the creepy crawlies in stacks and leave for 15 minutes.
Step 9:
Roll the ropes as thinly as possible, fold them in half and twist, then fold them in half again and twist again. Connect the ends.
Step 10:
Heat vegetable oil in a deep frying pan or wok and fry the donuts over medium heat, stirring and turning, until golden brown.
Step 11:
Dust the donuts with powdered sugar if desired.
Cooking tips
The dough should be soft and smooth.
Don't overcook the damahuas, they should just be golden brown and crispy.
