Airy pancakes are tender and fluffy pancakes that are perfect for breakfast or dessert. Their light texture and softness make them especially delicious when paired with syrup, berries, or fresh fruit.
Step-by-step recipe
Step 1:
Break the eggs into a bowl and sprinkle them with sugar.
Step 2:
Add sunflower oil, vanilla sugar and whisk until smooth.
Step 3:
Add milk to the eggs and sift flour into it.
Step 4:
Add baking powder and mix again evenly.
Step 5:
Pour the batter into a clean, hot pan, using one to one and a half spoons for each pancake.
Step 6:
Fry pancakes for 3-4 minutes on each side, until the surface is golden brown.
Cooking tips
You shouldn't knead the dough for too long, otherwise too much gluten will be released.
Do not use a mixer to mix the dough, the mixer attachments get hot and activate the baking powder, preventing the dough from rising in time.
Serve pancakes stacked and drizzled with syrup, jam or honey.
