Origin of the recipe
Sochivo is a traditional Russian dish served with the first star on Christmas Eve. Classic sochivo is a porridge, usually millet, mixed with honey, dried fruit, boiled poppy seeds, and chopped nuts. It symbolizes the beginning of a new life and its well-being. These days, sochivo is often made with rice, raisins, dried apricots, and honey.

Step-by-step recipe
Step 1:
Rinse the round grain rice well, soak it in cold water for 2 hours and drain the water.
Step 2:
Bring water to a boil in a saucepan, add washed rice and cook until done, stirring.
Step 3:
Drain the cooked rice in a colander, place it in a bowl, and add a tablespoon of honey. Stir.
Step 4:
Rinse and steam the raisins in boiling water.
Step 5:
Add dried apricots and raisins to the rice and stir.
Step 6:
Let the juice sit for an hour and serve.
Cooking tips
Add honey to the rice while it is still hot – this will help the ingredients mix better.
If desired, you can add boiled poppy seeds, mashed with sugar, and nuts to the sochivo – this recipe will be even more classic.
