Pancakes with apples

Apple pancakes are a traditional Russian dish with roots in peasant cuisine. Apples, readily available and preserved throughout the winter, added sweetness and richness to simple rye or wheat pancakes, especially during Lent or at family tea parties.

Step-by-step recipe:
Step 1:
In a blender, combine milk, eggs, sugar, salt and vegetable oil.
Step 2:
Add flour and beat all ingredients until smooth.
Step 3:
Pour the dough into a bowl and let it rest for 15 minutes.
Step 4:
Peel and core the apples.
Step 5:
Cut the apples into small cubes.
Step 6:
Melt the butter in a frying pan and add sugar.
Step 7:
Fry the apples in sugar until soft.
Step 8:
Add cinnamon and stir.
Step 9:
Heat a frying pan and grease it with vegetable oil.
Step 10:
Pour a ladle of batter into the pan and quickly spread it over the bottom by tilting the pan.
Step 11:
Fry the pancake over medium heat until golden brown on one side.
Step 12:
Carefully flip the pancake with a spatula and fry the other side.
Step 13:
Place the finished pancake on a plate.
Step 14:
Repeat steps 9-13 until you run out of dough.
Step 15:
Place the apple filling on one half of the pancake and carefully cover with the other half.
Step 16:
Fold the pancake in half again to form a triangle.
Step 17:
Fry the pancakes on each side in butter.
Step 18:
Place the apple-filled pancakes on a plate and serve.
Cooking tips
For a better dough consistency, be sure to sift the flour before adding it - this will prevent lumps.
Don't skip the dough resting stage—this will allow the gluten to relax, and the pancakes will be elastic and won't tear when rolled.
When frying, use medium heat - too high heat can cause burning.
If the dough seems too thick, you can add a little milk.
These pancakes go great with any filling—try replacing the sweet filling with cottage cheese or mushrooms.
Experiment with the amount of sugar - for a more dietary option, you can reduce it or eliminate it altogether.
For a richer flavor, you can add a pinch of vanilla sugar to the dough.
