Egg Quesadilla with Two Fillings
Origin of the recipe
A quesadilla is a traditional Mexican quick-fix dish made with a tortilla. Unlike the famous burritos, the filling here isn't wrapped in a tortilla, but rather folded into a tortilla. A traditional quesadilla is filled with cheese, but these days, fillings can be almost anything. Try these two quesadilla options with scrambled eggs for breakfast.

Step-by-step recipe
Step 1:
Break 2 eggs into a bowl, add salt and pepper and mix well with chopsticks.
Step 2:
Finely chop the green onions, add to the eggs and mix.
Step 3:
Place a frying pan on the heat and grease with butter.
Step 4:
Pour eggs and onions into the pan.
Step 5:
Place a tortilla over the eggs and onions, press down with a spatula, cook for a few seconds, then turn the tortilla to release the eggs from the pan.
Step 6:
Carefully flip the tortilla over with a spatula and sprinkle half of it with grated mozzarella.
Step 7:
Place baby spinach leaves on top of the mozzarella.
Step 8:
Thinly slice the tomato and place three slices on top of the spinach.
Step 9:
Top the tomato slices with two slices of processed sandwich cheese.
Step 10:
Cover the filling with the free edge of the flatbread and press down with a spatula.
Step 11:
Grease the empty half of the pan with butter, slide the tortilla in and continue frying on both sides until lightly browned.
Step 12:
Repeat all the steps from the beginning with the second tortilla until it is turned over with the egg layer facing up.
Step 13:
Place two slices of processed cheese on top of the eggs.
Step 14:
Sprinkle the cheese with finely crumbled bacon and top with spinach leaves.
Step 15:
Sprinkle the spinach with grated mozzarella, fold the free edge of the tortilla over the top and press down.
Step 16:
Grease the pan with oil if necessary and brown the flatbread on both sides.
Cooking tips
You can freely experiment with quesadilla fillings.
Do not overcook the tortillas, they should only be slightly browned, so the heat should be kept low the whole time.
Quesadillas are best served hot.
