Step-by-step recipe
Step 1:
Heat a frying pan. Place the heated pan over medium heat. Grease the bottom with vegetable oil.
Step 2:
Prepare the egg mixture. Beat the eggs in a bowl, season with salt and pepper. Pour the mixture into the pan very quickly, ensuring the eggs are evenly distributed.
Step 3:
Place the tortilla. Carefully place the tortilla on top of the egg base. This will be the base for your breakfast.
Step 4:
Add the filling. Spread the sausage and half the cheese over the surface. Top with tomatoes and cheese—this combination will add freshness and rich flavor. Finish with a layer of the remaining cheese.
Step 5:
Cook covered. Cover the pan and cook for 2–3 minutes, until the cheese and fragrant tomatoes have coated the pan and the cheese is completely melted.
Step 6:
Fold and serve. Using a spatula, carefully fold the filled tortilla in half in the pan. Transfer to a plate. Garnish with additional tomatoes and serve hot.
Cooking tips:
Use a preheated frying pan to prevent the eggs from sticking and to make the tortillas softer.
Don't oversalt: the sausage already contains salt.
For a crispy crust, lightly fry the outside of the finished tortilla for another 30 seconds.
If you don't have a lid, cover the pan with a plate - this will speed up the cooking time.
