Step-by-step recipe
Step 1:
Take the bone-in shanks, chopped into discs, wipe off any moisture and tie them with string so that the meat doesn’t fall apart.
Step 2:
Sprinkle the meat with freshly ground pepper and salt. Dust the meat with flour, pressing it down so that it adheres slightly to the meat.
Step 3:
Heat vegetable oil in a frying pan. Fry the steaks on each side for 3 minutes over high heat.
Step 4:
Melt the butter in a frying pan. Chop the onion and add it to the pan. Fry for 5 minutes over medium heat.
Step 5:
Add chopped garlic, carrots, and celery to the onion. Stir and fry for 3 minutes over medium heat.
Step 6:
Pour dry white wine over the vegetables and fry for 3 minutes over medium heat.
Step 7:
Add chopped tomatoes, beef broth, nutmeg, salt, black pepper, bay leaf, and rosemary. Stir and bring to a boil.
Step 8:
Place the steaks in the pan and cover them completely with the vegetables. Add allspice and black pepper.
Step 9:
Place in the oven for 2 hours at 180 degrees.
Cooking tips
Please note that the steak must contain a bone – it makes the broth rich and flavorful.
For traditional Italian ossobuco, olive oil is preferred. The broth can be made from either beef or chicken.
