Mashed potatoes are considered one of the most common side dishes—and that's a shame! It all depends on how you prepare them. The Greek savory appetizer Skordalia (meaning "garlic") may be made with ordinary potatoes, but the additions—primarily crushed garlic and almonds—guarantee a truly amazing flavor experience!

Step-by-step recipe
Step 1:
Cut the potatoes into pieces, place them in a saucepan, cover with water, add salt, bring to a boil, cover with a lid and cook for 20-25 minutes over low heat.
Step 2:
Pour boiling water over the almonds, stir and leave for 10 minutes.
Step 3:
Peel the almonds.
Step 4:
Place the almonds in a blender with the garlic, salt, olive oil, and white wine vinegar and blend until smooth.
Step 5:
Drain the potatoes and mash them well with a masher.
Step 6:
Add the almond mixture and stir.
Step 7:
Add salt to taste, stir, add herbs, lemon zest and serve.
Cooking tips
When peeling almonds, it's best to use gloves - this way you won't rub your fingers and they won't smell like nuts.
For making mashed potatoes, it is better to use an electric masher.
