Marinade for grilled mushrooms
Origin of the recipe
You can grill not only meat but also a variety of vegetables and mushrooms, especially large button mushrooms. Marinated in mayonnaise, they make a great side dish for regular shashlik or a standalone vegetarian dish.

Step-by-step recipe
Step 1:
Wash and dry the mushrooms well and place them in a bowl.
Step 2:
Add regular or Adyghe salt, hops-suneli, dried Italian herbs, ground paprika and ground black pepper.
Step 3:
Add soy sauce and homemade mayonnaise.
Step 4:
Mix the mushrooms with mayonnaise and leave to marinate for 1 hour to 24 hours.
Step 5:
Thread the mushrooms onto skewers through the stem.
Step 6:
Fry for 2-3 minutes on each side until golden brown, for a total of no more than 10-15 minutes.
Cooking tips
Choose larger mushrooms – they won’t fall out of the grill and are easy to thread onto skewers.
If you are going to fry mushrooms on skewers, it is better to leave them to marinate for a day, then they will not crack.
Mayonnaise can be replaced with the same amount of vegetable oil.
Mushrooms can be alternated on skewers with different vegetables - cherry tomatoes, pieces of zucchini, eggplant.
