Step-by-step recipe
Step 1:
Finely chop a medium onion. Heat a little olive oil in a saucepan, add the onion, and lightly fry, stirring.
Step 2:
Peel, wash and cut the carrots into rings, add to the onion and lightly fry, stirring.
Step 3:
Add a liter of vegetable broth, stir, cover and cook for 10 minutes.
Step 4:
Remove the pan from the heat and puree the contents with a blender.
Step 5:
Add salt and pepper, mix well.
Step 6:
Using a vegetable peeler, peel 4 small peeled carrots into strips.
Step 7:
Pour some vegetable oil into the frying pan, add carrot strips, salt, pepper and lightly fry.
Step 8:
Ladle the soup into bowls, garnish with carrot ribbons, chopped parsley and ground pepper and serve.
Cooking tips
Do not overcook the onion; it should not burn under any circumstances.
It is better to take small carrots and cut them into thin rings so that they cook well.
When frying carrot strips, carefully turn them over with two spatulas so that they do not lose their shape.
To decorate the soup, you can use a mixture of ground peppers – it looks more aesthetically pleasing.
