Step-by-step recipe
Step 1:
Prepare all the ingredients: boil the potatoes, carrots, and eggs, and let them cool. Cut the sausage and cucumber into small cubes. Chop the herbs. Halve the prunes and remove the pits.
Step 2:
Prepare mayonnaise for spreading the layers. Pour some of the mayonnaise into a pastry bag or zip-top bag, making a small hole in the corner. You'll need this to create the patterns.
Step 3:
Begin assembling the salad. Place the first layer in the bottom of a salad bowl: grate the boiled potatoes on a coarse grater and smooth them out gently with a spatula. Spread mayonnaise over the potato layer.
Step 4:
The next layer is diced sausage. Arrange it in an even layer on top of the potatoes. Spread mayonnaise over the sausage layer, creating a lattice pattern again.
Step 5:
Add a layer of diced cucumber and spread with mayonnaise.
Step 6:
Grate the boiled eggs (yolks and whites together) and add them as the next layer. Coat with mayonnaise.
Step 7:
Sprinkle the salad with chopped herbs. Spread this layer with mayonnaise.
Step 8:
Grate the boiled carrots and add them as the final layer. Gently flatten them with a fork, shaping the salad into an oval shape.
Step 9:
For decoration: cut the prepared prunes into long strips. Carefully lay these strips on top of the carrot layer, creating a "tiger stripe" pattern.
Step 10:
Place the finished Olivier under a fur coat salad in the refrigerator for 1-2 hours to allow it to soak well.
Cooking tips
Enhance the flavor: Use a high-quality homemade or trusted brand of mayonnaise. For a richer flavor, add a pinch of salt and ground black pepper between the layers.
Avoid mistakes: Don't add too much mayonnaise—the salad can become too greasy and lose its shape. Each layer should be thin and even to ensure a neat salad.
Substitutions: If you don't have dairy sausage, you can use ham or smoked meat. Instead of prunes, you can garnish with sliced olives.
Serving: Serve the salad chilled. When serving, slice it into neat portions to preserve its beautiful shape and layering. This dish will be a true centerpiece at any celebration.
Keep it simple: All ingredients can be boiled and prepared in advance. Assembling the salad takes only 15-20 minutes. Use bowls or ramekins for layering if you want to make mini-versions for each guest.
