Step-by-step recipe
Step 1:
Place flour in a bowl, add baking powder, baking soda, salt and whisk.

Pour sugar into a clean bowl, grate lemon zest, and mix.

Add two eggs to the sugar and beat with a whisk until lightly foamed.

Add vanilla extract, milk, and vegetable oil. Mix well.

Step 11:

Cooking tips
Instead of milk, you can use sour milk or kefir – this will make the muffins fluffier and tastier.
To cream the butter with the flour and sugar, you can first use a hand-held cookie blender, then rub the crumbs together by hand. Alternatively, you can use a large fork.
