Step-by-step recipe
Step 1:
Pour hot water over the almonds, peel them and grind them in a blender.
Step 2:
Beat 2 eggs in a bowl with a mixer, add sugar substitute, beat again.
Step 3:
Add salt, Greek yogurt or sour cream, and a teaspoon of vanilla extract. Beat with a mixer.
Step 4:
Add almond flour, mixing with a spatula.
Step 5:
Fill silicone muffin cups set in a larger pan with batter.
Step 6:
Slice some almonds, chop some dark chocolate and sprinkle it on top of the muffins.
Step 7:
Bake for 20 minutes at 200 degrees.
Step 8:
Carefully remove the muffins from the tins and serve with tea.
Cooking tips
Instead of homemade almond flour, you can use ready-made one.
Mix the almond flour into the dough gradually, stirring constantly, otherwise lumps of dry flour will form.
Instead of a sweetener, you can use maple syrup or honey.
