Potato mushrooms with garlic sauce
Origin of the recipe
In Japan, China, and Korea, eating is known to be done with chopsticks. Therefore, food is often prepared and served in a way that allows for easy eating without a knife, in individual medium-sized pieces. This unusual, savory, and very attractive potato appetizer is also convenient to eat with chopsticks, although it's not necessary. These potato "mushrooms" are aromatic and have a pleasantly firm texture.

Step-by-step recipe
Step 1:
Peel 2 large potatoes, cut into cubes, place in a baking dish and cover tightly with cling film, piercing holes in it.
Step 2:
Microwave for 7 minutes at 700 watts.
Step 3:
Check for readiness with a stick and mash the finished potatoes thoroughly with a masher.
Step 4:
Add 200 g of potato starch and 150 ml of water to the resulting puree and knead the dough with your hands.
Step 5:
Form balls from the dough and, pressing with the neck of the bottle, give them the shape of mushrooms.
Step 6:
Place the items in boiling water and cook for 2.5 minutes, during which time they should increase in size.
Step 7:
Carefully discard the “mushrooms” in a colander, rinse in ice water, drain again and place in a bowl.
Step 8:
Sprinkle 0.7 tablespoons of crushed garlic over the “mushrooms”, pour in 4 tablespoons of soy sauce, add a teaspoon of granulated sugar, a tablespoon of chili powder, and a tablespoon of chopped green onions.
Step 9:
Pour 3 tablespoons of avocado oil into a saucepan and bring to a boil.
Step 10:
Pour boiling oil over the spiced potatoes, stir gently to coat the mushrooms on all sides, and serve.
Cooking tips
When kneading the dough, gradually add water and mix until the mixture is smooth and doesn't crack when you shape it. Use fresh, finely chopped or crushed garlic—it's more flavorful than ground garlic. You can use another vegetable oil instead of avocado oil.
