Step-by-step recipe
Step 1:
Soak raisins in boiling water and leave to swell for 15 minutes.
Step 2:
Chop the dates into a bowl, add olive oil and tamari sauce.
Step 3:
Grind the contents of the bowl with a blender.
Step 4:
Finely chop half an onion and add to the date puree. Let marinate for 10-15 minutes.
Step 5:
Grind the soaked raisins in a blender, setting some aside.
Step 6:
Shred the pumpkin using a grater-shredder.
Step 7:
Place the pumpkin on a plate, add chopped dates and raisins. Stir.
Step 8:
Garnish the dish with the remaining raisins.
Cooking tips
It is better to leave the chopped dates and onions to marinate for as long as possible so that the sauce tastes better.
Before shredding, remove the seeds and fibers from the pumpkin and cut off the skin.
The pumpkin strips should be long so that the dish resembles spaghetti.
When using a grater or shredder, be careful and protect your hands.
Tamari sauce is a type of soy sauce that is wheat- and gluten-free.
