Step-by-step recipe
Step 1:
Finely chop the anchovies and add 2 cloves of crushed garlic, mix everything until smooth.

Place egg yolks in a bowl, add wine vinegar and mustard, whisk well.

Stirring constantly, add 80 ml of olive oil to the sauce and beat until thickened.

Add prepared anchovies with garlic, lemon juice and water, stir.

Add grated Parmesan and mix thoroughly, the sauce is ready.

Cut white bread into medium-sized cubes and fry in a frying pan with two tablespoons of olive oil until golden brown.

Sprinkle the breadcrumbs with Parmesan cheese (10-15 g), stirring constantly. Remove the pan from the stove.
Step 8:
Divide the chicken fillet into two parts and cut each part in a butterfly shape (to get one large and thin piece from each half breast), salt and pepper on each side.

Fry the breast for 3-4 minutes on each side.
Step 10:
Coarsely chop the lettuce leaves, pour over two tablespoons of lemon juice, add half of the prepared sauce and half of the croutons, and mix.
Step 11:
Cut the finished breast into long strips.

Place the prepared lettuce leaves on a large plate and place the chicken breast on top.
