Origin of the recipe
Traditionally, a salad consisting of fish, vegetables, and fruit is served first on the New Year's table. The Chinese believe this salad brings happiness, wealth, and good fortune. The main and most important ingredient in this salad is raw fish. In fact, fish is practically considered a deity in China. The word "fish" in Chinese is pronounced "Yu," the same as happiness. The Chinese consider two salmonids—trout and salmon—to be symbols of well-being, abundance, and prosperity.

Step-by-step recipe
Step 1:
Cut the vegetables and pickled ginger into strips.
Step 2:
Peel and cut the pomelo into small pieces.
Step 3:
Mix sesame oil, plum sauce and hot water.
Step 4:
Place the chopped vegetables, ginger and pomelo around the edge of the round dish, and place the fish pieces in the center.
Step 5:
Add sauce and seasonings.
Step 6:
Serve unmixed, allowing guests to mix everything thoroughly and portion it out.
Cooking tips
Traditional plum sauce can be purchased at Chinese grocery stores.
If you are uncomfortable with raw fish, you can use pieces of lightly salted salmon.
It is believed that the better the guests mix the salad, the more luck and prosperity fate will bestow upon them in the new year.
