Oven-baked pork shashlik on skewers
Origin of the recipe
Pork shashlik is one of the most popular dishes in the post-Soviet space and the Caucasus. Its history and recipe are deeply rooted in the traditions of nomadic peoples and rural populations, where meat has always played an important role in the diet.

Step-by-step recipe
Step 1:
Cut the pork into small pieces of approximately the same size and place in a bowl.
Step 2:
Cut the onion into half rings, crush well with your hands and add to the bowl.
Step 3:
Pour half a liter of tomato juice into a clean bowl, add salt, stir, and pour over the meat. Stir well.
Step 4:
Add vegetable oil, ground black pepper, and other spices as desired. Stir and refrigerate for 8-12 hours.
Step 5:
Soak wooden skewers in hot water and leave for 15 minutes.
Step 6:
Thread the meat onto sticks.
Step 7:
Pour a little water into the bottom of the baking dish and place the kebabs on top.
Step 8:
On a baking sheet, in a foil form, make a fire of wood chips.
Step 9:
Place the meat and burning wood chips in a preheated oven, close the door and cook at 200 degrees for 30 minutes.
Step 10:
Turn the kebab over and cook for another 5 minutes.
Cooking tips
It is better to use homemade tomato juice without salt, sugar and preservatives.
Be careful when lighting wood chips.
