Step-by-step recipe
Step 1:
Pour warm milk into a bowl, add sugar, and crumble fresh yeast. Stir.
Step 2:
Add salt, an egg, and one egg white. Set the yolk aside for brushing the buns.
Step 3:
Gradually add flour while stirring until the dough stops sticking to your hands.
Step 4:
Add butter piece by piece, stirring.
Step 5:
Place the dough, rolled into a ball, in a greased bowl, cover the top and leave to rise for 1 hour.
Step 6:
Punch down the risen dough and divide into pieces weighing 45-50 grams.
Step 7:
Roll each piece into a ball, place on a surface, cover with film and a towel and leave for 10-15 minutes.
Step 8:
Combine cottage cheese, sour cream, and condensed milk in a bowl, add vanilla sugar, and orange zest. Blend well.
Step 9:
Using the bottom of a glass, greased with vegetable oil, make indentations in the cheesecake blanks.
Step 10:
Mix the yolk with milk and brush the top of the dough pieces.
Step 11:
Fill each vatrushka with the curd filling—a heaping teaspoon at a time. Garnish with berries, if desired.
