Step-by-step recipe
Step 1:
The first step is preparatory. Wash the beans, place them in a container, and cover with cold water. Let them soak for 2 hours. Next, boil the beans in lightly salted water.
Step 2:
Process the onion: peel, dice, fry in oil until golden brown.
Step 3:
Wash the tomatoes, grate them, and puree them. The recipe calls for about one and a half liters of prepared tomato juice with pulp.
Step 4:
Add the onion to the tomato juice and season with salt and sugar. Bring the mixture to a boil. Stir constantly to prevent the juice from burning.
Step 5:
Grate the carrots on a coarse grater, add them to the juice and cook the mixture for a quarter of an hour until the vegetables become soft and are soaked in the tomatoes.
Step 6:
Peel the pepper and cut it into strips. Transfer it to the pan with the remaining ingredients and simmer for another 15 minutes.
Step 7:
Add the pre-cooked beans to the solyanka and stir. Cook over low heat for another 30-35 minutes.
Step 8:
When the vegetables are soft enough, pour vinegar into the salad, stir, and turn off the heat.
Step 9:
Place the solyanka mixture into previously sterilized jars and seal. Turn the jars upside down and wrap them in a towel or blanket.
Step 10:
Store the solyanka in a cool place for the winter after the contents of the jar have completely cooled. A balcony, refrigerator, or cellar are all suitable storage options.
Cooking tips
For a richer flavor, the onion can be lightly browned in vegetable oil before adding to the tomato juice.
It is recommended to cook the beans in advance, especially if you are preparing the salad in large quantities, to make the cooking process more convenient.
Instead of grated tomatoes, you can use ready-made tomato juice, but the flavor will be less intense.
When choosing peppers, choose fleshy and sweet ones; they provide a more pleasant texture.
