Green beans, or asparagus beans, are a favorite among many people who watch their figures and maintain a healthy diet. This plant has been cultivated in Europe since the 18th century. It contains many vitamins and antioxidants, which reduce the risk of heart disease. This light and creamy soup is perfect even for children and the elderly.

Step-by-step recipe
Step 1:
Wash the green beans and trim the ends.
Step 2:
Finely chop some of the beans and set aside.
Step 3:
Cut the remaining beans into longer pieces.
Step 4:
Cut the onion into cubes.
Step 5:
Pour olive oil into a heavy-bottomed saucepan and lightly fry the onion.
Step 6:
Crush three cloves of garlic into a saucepan and fry a little.
Step 7:
Add longer beans and stir.
Step 8:
Pour in the vegetable broth and stir.
Step 9:
Cover the soup and simmer for about 15 minutes.
Step 10:
Peel the potato and cut into cubes.
Step 11:
Place the potatoes in a saucepan, add water, salt, and boil until half-soft.
Step 12:
Add small beans and cook until tender.
Step 13:
Remove the pan from the heat and puree the contents with an immersion blender.
Step 14:
Add salt and pepper to taste and stir.
Step 15:
Drain the potatoes and beans in a sieve and add to the soup.
Step 16:
Ladle the soup into bowls and serve.
Cooking tips
If you don't have fresh green beans, you can use frozen ones and defrost them. They're usually already cut into fairly short pieces, so you'll only need to chop some of them finely.
To prepare this soup, it is better to use a thick-walled saucepan to fry the onions in it.
