This red velvet cake recipe is the perfect choice for a holiday table. This dessert originated in the early 20th century in the American South and became especially popular in Texas. Its rich red color and delicate, velvety texture make it truly special. Treat your guests to a classic red velvet cake!

Step-by-step recipe

Step 1:

Place flour in a bowl. Add cocoa powder, baking powder, and baking soda and whisk well.

Step 2:

Pour the sour milk into a mug, add red food coloring and stir until the color is uniform.

Step 3:

Break eggs into a clean bowl, add sugar, salt and beat with a mixer until fluffy.

Step 4:

Add vegetable oil and melted butter and beat again.

Step 5:

In two stages, stirring with a whisk, add dry ingredients and yogurt with coloring to the resulting mixture.

Step 6:

Divide the dough into two portions and bake two biscuits for 30-35 minutes at 180 degrees.

Step 7:

Cut the biscuits in half lengthwise, leave three layers for the cake, and crush one into crumbs for decoration.

Step 8:

Place the cream cheese, powdered sugar, and whipping cream in a bowl. Beat with a mixer until fluffy.

Step 9:

Using a pastry bag, cover the first cake layer with cream and smooth it out with a spatula.

Step 10:

Do the same with the remaining layers, also apply cream to the side of the cake and smooth it out.

Step 11:

Cover the entire surface of the cake with the prepared crumbs and put it in the refrigerator for 3-6 hours.

Cooking tips

What's called buttermilk in foreign recipes and translated as "buttermilk" is actually curdled milk, prepared either the traditional way or from milk fermented with lemon juice. Therefore, this recipe calls for curdled milk.

Any food coloring will do, in the shade of red you like best.
