Vegan Chickpea and Pea Falafel

Step-by-step recipe
Step 1:
Place green peas in a bowl.
Step 2:
Add cashews.
Step 3:
Pour in coconut milk and olive oil.
Step 4:
Grind the contents of the bowl with an immersion blender.
Step 5:
Add chickpea flour.
Step 6:
Finely chop the dill and add to the bowl.
Step 7:
Add cumin powder, psyllium husk, ground coriander, and salt. Stir and let sit for 5 minutes.
Step 8:
Grease a baking sheet with oil.
Step 9:
Form slightly flattened balls from the vegetable mixture and place them on a baking sheet.
Step 10:
Bake for 30 minutes in an oven preheated to 180 degrees.
Step 11:
Mix dairy-free yogurt and vegan mayonnaise in a clean bowl.
Step 12:
Chop the dill and add to the bowl.
Step 13:
Add garlic and onion powder, salt, pepper, lemon juice and water. Stir.
Step 14:
Serve falafel with the prepared sauce.
Cooking tips
To prevent the falafel mixture from sticking to your hands, grease them with vegetable oil.
If you don't have psyllium husk, just add more chickpea flour.
You can cook this falafel not only in the oven, but also in a frying pan or deep-frying.
