Step-by-step recipe
Step 1:
Combine marjoram, pepper mix and salt in a bowl.
Step 2:
Place the brisket skin side up and make 5mm deep mesh cuts on it.
Step 3:
Cut 3 large cloves of garlic lengthwise into four pieces, make punctures in the brisket with a knife and push the pieces of garlic into the meat.
Step 4:
Line a baking sheet with two sheets of foil and place the brisket on it.
Step 5:
Rub the brisket with spices on all sides.
Step 6:
Cover the brisket with finely chopped garlic, unwrapped leeks, two sprigs of thyme, sprinkle with peppercorns and wrap the brisket tightly in foil.
Step 7:
Bake for 2 and a half hours in the oven at 160 degrees.
Step 8:
Cut into pieces and serve.
Cooking tips
Making cuts in the thick skin of the brisket will help the ball cook better and soak up the spices.
You can use either dried or fresh thyme, it will still be delicious.
