This dish, made with just three main ingredients, boasts a rich and varied flavor thanks to its blend of seasonings. It's also very healthy and suitable even for those watching their weight and typically a little wary of potatoes.
Step-by-step recipe
Step 1:
Finely chop the onion.
Step 2:
Pour olive oil into a frying pan and fry the onion until translucent.
Step 3:
Crush 2 cloves of garlic, add to the onion and stir.
Step 4:
Rinse the green beans, trim the ends, add to the roasting pan and stir.
Step 5:
Finely chop the sun-dried tomatoes, add to the roasting pan and stir.
Step 6:
Add salt, dried basil, oregano, two bay leaves, garlic powder, fennel, dried thyme, onion powder and stir.
Step 7:
Add two teaspoons of red wine vinegar. Stir.
Step 8:
Add vegetable broth and stir.
Step 9:
Cut the red bell pepper into strips and add to the other vegetables.
Step 10:
Add diced tomatoes, canned or fresh. Stir.
Step 11:
Add tomato sauce and stir.
Step 12:
Peel and quarter the potatoes and place in a roasting pan.
Step 13:
Add a sprig of rosemary.
Step 14:
Remove the roasting pan from the heat and continue cooking in the oven for 40 minutes at 200 degrees.
Step 15:
Sprinkle the finished dish with finely chopped parsley, grated vegan Parmesan and pepper.

Stir the vegetables regularly to prevent them from burning.
If you don't have fresh green beans, you can use frozen ones.
