Step-by-step recipe
Step 1:
Take a container of kefir and add 1 teaspoon of salt and baking soda. Stirring vigorously, pour the kefir into a bowl once it foams.
Step 2:
Sift the flour into the kefir, whisking constantly. When the dough is ready, cover the bowl with a towel for 30-40 minutes.
Step 3:
Grate the Adyghe cheese on a coarse grater.
Step 4:
Finely chop fresh herbs.
Step 5:
Boil 500 grams of potatoes. Mash the potatoes until smooth and lump-free.
Step 6:
Add cheese, herbs, and 1/2 teaspoon of salt to the potatoes. Stir.
Step 7:
Take the dough and divide it into 7-8 balls of equal size.
Step 8:
Take a piece of dough and form it into a pancake with a diameter of about 15 cm.
Step 9:
Place a large, heaping spoonful of filling in the center of the pancake. Roll the filling into the dough like a pie.
Step 10:
Turn the pie seam-side down and roll it out with a rolling pin until you have a large pancake about 1 cm thick. Repeat for all the pieces of dough and all the filling.
Step 11:
Heat a frying pan and place the pancake in it. Fry over low heat for about 3 minutes on each side, until golden brown.
Step 12:
Brush the khichins with oil and repeat the frying process for each remaining khichin. Serve in a stack.
Cooking tips
Do not grease the pan while cooking, it must be dry!
You can serve the finished khichins with various sauces, such as sour cream or tomato sauce with herbs. This will make them even more delicious.
