Forshmak
Origin of the recipe
Forshmak means "snack" in Yiddish. It's one of those Jewish dishes that everyone has heard of; it's very simple and delicious. Classic Jewish forshmak is minimalist—it only includes herring, bread, onions, and butter. We offer you a recipe for Odessa-style forshmak, with apples and eggs.

Step-by-step recipe
Step 1:
Finely chop the onion. Melt 20g of butter in a frying pan, add the onion, and fry for 2-3 minutes over medium heat. Let cool.
Step 2:
Line a board with parchment paper and place the herring on it. Remove the bones from the fish with tweezers.
Step 3:
Cut the herring into medium pieces and place in a blender.
Step 4:
Peel one green apple, cut it into medium pieces, and place it in a blender. Squeeze the juice of half a lemon into the blender.
Step 5:
Cut the crust off the white bread, cut the bread into medium pieces, place in a bowl and pour milk over it.
Step 6:
Mash and squeeze the bread, add to the blender.
Step 7:
Boil three eggs, cut into pieces and add to a blender.
Step 8:
Add fried onions to a blender and chop all ingredients.
Step 9:
Add 80 g of butter and chop again.
Step 10:
Place in a bowl and serve with toasted bread.
Cooking tips
Instead of grinding the ingredients in a blender, you can put them through a meat grinder with large holes or mash them with a fork to feel the texture.
You can omit the bread and milk, or soak the bread in water. In traditional Jewish cuisine, milk is not mixed with meat and fish, although it is sometimes permitted.
To remove the herring smell from your blender, wipe it with lemon juice.
