Baked beef tongue with mushrooms

Step-by-step recipe
Step 1:
Rinse the tongue thoroughly and cover with cold water. Let it steep for 20 minutes.
Step 2:
Place the beef tongue in a saucepan with clean water. Add the onion, carrot, salt, pepper, and bay leaf. Simmer over low heat for 2 hours.
Step 3:
Remove the tongue from the broth and let it cool. Peel off the skin.
Step 4:
Cut the tongue into thin slices (about 1.5 cm).
Step 5:
Grease a baking dish with oil. Place half of the tongue slices in it.
Step 6:
For the filling, finely chop the red onion, tomato, and parsley. Add mayonnaise, salt, and pepper. Stir.
Step 7:
Place the filling on the tongue in the mold.
Step 8:
Sprinkle with grated cheese. Bake in the oven at 180°C for 10 minutes.
Step 9:
While it's baking, fry the other half of the beef tongue slices in a frying pan.
Step 10:
Transfer the fried tongue to a clean plate.
Step 11:
Fry the sliced mushrooms in a frying pan with garlic and soy sauce.
Step 12:
Serve the fried tongue with mushrooms.
Step 13:
Remove the baked tongue slices from the oven and transfer to a clean plate. Garnish with herbs and serve!
Cooking tips
To keep the tongue soft, do not skip the cooking stage or reduce the cooking time.
If you want a crispier crust, increase the oven temperature for the last 5 minutes.
Don't overdo it with salt, as the cheese and soy sauce already contain salt.
Serve immediately after cooking, while the cheese is melted.
You can use any other mushrooms instead of champignons.
For variety, make several filling options: with olives or with capers.
These tongues go perfectly with mashed potatoes or rice.
