Step-by-step recipe
Step 1:
Take three portions of chicken fillet and make 5 deep cuts on each.
Step 2:
Place the chicken in a baking dish.
Step 3:
Place salt, oregano, paprika, ground coriander, black pepper, soy sauce, and olive oil in a bowl. Stir.
Step 4:
Brush the chicken with the prepared sauce.
Step 5:
Cut the tomatoes into half-slices and insert them into the cuts.
Step 6:
Cut a block of Parmesan cheese into equal slices and place them next to the tomatoes.
Step 7:
Bake for 25 minutes at 180 degrees.
Step 8:
Boil the diced potatoes, place them in a bowl, add milk, softened butter, salt and mash with a masher.
Step 9:
Finely chop the bacon, place in a dry frying pan and fry.
Step 10:
Add bacon to mashed potatoes and stir.
Step 11:
Place a portion of potatoes in a bowl, add olive oil and black pepper.
Step 12:
Serve the baked chicken with potatoes and a sprig of rosemary.
Cooking tips
Do not make the cuts too deep to prevent the fillet pieces from falling apart.
Cut the Parmesan into slices about half a centimeter thick.
