Step-by-step recipe
Step 1:
Chop the onion, carrot and one stalk of celery into small cubes.
Step 2:
Chop the garlic well.
Step 3:
Cut the tomatoes into large slices, place them in a deep container and blend with an immersion blender until pureed.
Step 4:
Heat vegetable oil in a frying pan, add chopped onion and fry until golden brown.
Step 5:
Add carrots and cook over medium heat until tender, stirring constantly.
Step 6:
Add chopped celery, mix well.
Step 7:
Add garlic.
Step 8:
Add the minced meat and spread it around the pan.
Step 9:
Pour in the tomato puree and let it simmer well with the vegetables and minced meat.
Step 10:
Add salt, pepper, oregano, stir and leave to simmer over low heat for about 15 minutes, until some of the liquid has evaporated.
Step 11:
Pour in the red wine, stirring, let the alcohol evaporate and leave to simmer over low heat for another 10-15 minutes.
Step 12:
Cook the lasagna sheets in salted boiling water for 3-4 minutes, remove from the pan and let cool.
Step 13:
Grate the mozzarella and parmesan on a coarse grater.
Step 14:
In a saucepan, melt the butter over medium heat, add the flour and cook until thickened, stirring constantly.
Step 15:
While stirring, pour in warm milk, add salt, pepper, and ground nutmeg.
Step 16:
Simmer the sauce over low heat, stirring constantly, until the flour lumps disperse.
Step 17:
Grease the bottom of a baking dish with béchamel sauce, place the lasagna sheets in it and grease it again with sauce.
Step 18:
Place a layer of bolognese.
Step 19:
Place a layer of mozzarella, cover with sheets of dough, spread with béchamel sauce, and top with a layer of Bolognese and mozzarella. Alternate layers until you reach the top of your pan.
Step 20:
Place the last layer of dough, spread with béchamel sauce and sprinkle with Parmesan.
Step 21:
Bake in an oven preheated to 200 degrees for 20-30 minutes.
Cooking tips
Instead of fresh tomatoes, you can use ready-made tomato puree or tomato paste.
While preparing the Bolognese sauce, constantly chop the minced meat with a spatula.
If there are any lumps left in the béchamel sauce, you can puree it with a blender.
