Low-carb lasagna
Origin of the recipe
Lasagna is another Italian dish, no less famous than pizza and pasta. It's typically made with several layers of filling and a special dough. However, for those watching their figure, a unique version with zucchini instead of dough is available. Lasagna is no less delicious than the classic version and is an excellent addition to a healthy diet.

Step-by-step recipe
Step 1:
After cutting off the ends of the unpeeled zucchini, use a flat vegetable slicer to cut them lengthwise into thin slices.
Step 2:
Salt the zucchini slices, gently rub them together to distribute the salt, and place them in a colander.
Step 3:
Finely chop the onion and celery and lightly fry in a frying pan with a little oil.
Step 4:
Add 400g of ground beef to the pan and fry, stirring and shaking, until the ground beef changes colour.
Step 5:
Pour half a glass of white wine into the pan and stir.
Step 6:
Add salt and pepper and continue cooking, stirring, until the wine has evaporated.
Step 7:
Add 300 g of tomato puree prepared in a blender. Mix.
Step 8:
Add 3-4 green basil leaves, cover and cook for an hour on low heat.
Step 9:
Oil the bottom of the pan, spread the prepared minced meat in a thin layer, pour over the Béchamel sauce and sprinkle with zucchini slices.
Step 10:
Place another layer of minced meat, pour over the sauce, sprinkle with grated Parmesan, arrange oblong pieces of Provola cheese on top and cover with zucchini.
Step 11:
Repeat the last procedure three times, but sprinkle more grated cheese on the top layer and do not add provola.
Step 12:
Bake in the oven for about 20 minutes at 180 degrees.
Step 13:
Garnish with basil leaves, cut into portions and serve.
Cooking tips
It's best to use young zucchini or zucchini, as they have a tender skin and core. Use extra virgin olive oil; it's healthier and tastier.
Provola cheese can be substituted with Parmesan or any other semi-hard cheese. Mozzarella can also be used, but the flavor will be very different from the original.
You can make your own Béchamel sauce using butter, flour, milk, salt, and white pepper.
