Okroshka with radish and kefir
Origin of the recipe
This radish okroshka with kefir, without meat or sausage, is suitable even for vegetarians who eat eggs (for others, you can omit the eggs when serving). This delicious, light, low-calorie dish is perfectly refreshing in the summer heat. Radish greens add a new flavor to the ordinary greens.

Step-by-step recipe
Step 1:
Measure out the kefir and pour it into a bowl.
Step 2:
Add the same amount of cooled boiled water. Mix well with a whisk.
Step 3:
Finely chop the green onions and place in a clean, deep bowl.
Step 4:
Chop the dill and parsley and add to the onion.
Step 5:
Cut the tops off the radishes, remove the thick leaf stalks, finely chop the leaves and add to the rest of the greens.
Step 6:
Add salt and grind the herbs well with salt.
Step 7:
Cut the radish into not too small pieces and add to the greens.
Step 8:
Cut the cucumbers into strips and add to the vegetables and herbs.
Step 9:
Pour the chopped ingredients into the kefir and water mixture, stir and refrigerate.
Step 10:
Serve with sour cream and boiled eggs.
Cooking tips
The amount of radishes needed for okroshka depends on their size. It's best to buy radishes with their tops at the market or in the village.
Vegetarians may omit the egg when serving.
