Cold soup Kuksi
Origin of the recipe
This cold soup with meat, vegetables, noodles, and spicy seasonings is one of the hallmarks of Korean cuisine and a great substitute for our okroshka and cold borscht. Instead of kvass or kefir, Kuksi's ingredients are steeped in water with soy sauce, wine vinegar, and classic Korean spices.

Step-by-step recipe
Step 1:
Remove the membranes from the beef and cut it into thin strips.
Step 2:
Spray the pan with vegetable oil, add the meat, and fry, stirring, until cooked through. Season with salt and pepper.
Step 3:
Finely shred the cabbage and place in a bowl.
Step 4:
Add salt, half a tablespoon of paprika, half a teaspoon of chili powder, half a tablespoon of sugar, half a teaspoon of crushed garlic, dill, cilantro, a tablespoon of wine vinegar to the cabbage and mix thoroughly with your hand, rubbing the spices into the cabbage.
Step 5:
Cut the onion into half rings, spray a clean frying pan with vegetable oil and fry the onion for two minutes.
Step 6:
Cut the yellow bell pepper into strips, add to the onion, stir, fry for 2 minutes and remove the pan from the heat.
Step 7:
Cut fresh cucumbers in half, then into slices and place in a clean bowl.
Step 8:
Add dill, cilantro, half a tablespoon of sugar, half a tablespoon of sugar, half a tablespoon of paprika, salt to taste, half a teaspoon of crushed garlic, and half a teaspoon of chili powder to the cucumbers. Stir with a spoon.
Step 9:
Break 4 eggs into a clean bowl, add half a teaspoon of salt and beat lightly with a whisk.
Step 10:
Spray the frying pan with vegetable oil, pour in some of the egg mixture and fry into a thin pancake.
Step 11:
Make two more pancakes, stack them together, roll them up like a roll and cut into thin strips.
Step 12:
Separate into strips with your hands.
Step 13:
Bring water to a boil, add salt and cook thin noodles according to package directions.
Step 14:
Grate fresh cucumber and tomatoes into a clean bowl using a coarse grater.
Step 15:
Add a teaspoon of ground black pepper, half a teaspoon of ground chili, half a tablespoon of paprika, salt to taste, a tablespoon of sugar, crushed garlic, parsley, dill, 2 tablespoons of wine vinegar, and 100 ml of soy sauce. Mix well.
Step 16:
Add 1 liter of cold water, stir.
Step 17:
Place the noodles in a deep bowl, and place cabbage, strips of fried egg, meat, cucumber salad around the edge of the bowl, pour in the liquid, garnish with sliced chili pepper rings and sesame seeds and serve.
Cooking tips
Cucumber salad can be dressed with hot vegetable oil and fried onions.
This is a recipe for summer kuksi. Winter kuksi is made with kimchi made from fermented Chinese cabbage and spices, rather than fresh cabbage. Also, winter kimchi is made with hot liquid (kuksi-muri), not cold.
There is no strictly canonical recipe for kuksi, so you can use your imagination.
