Step-by-step recipe
Step 1:
Place the cottage cheese in a food processor bowl, add the butter, sugar, three egg yolks and mix.
Step 2:
Transfer the prepared mixture into a saucepan, place over low heat and heat, stirring constantly, then remove from the stove.
Step 3:
Mix the mixture until smooth using an immersion blender.
Step 4:
Divide the curd mixture into three bowls.
Step 5:
Add melted white chocolate to one of the bowls and stir. You can melt the chocolate in a double boiler or in the microwave.
Step 6:
In the second bowl, add melted regular chocolate and stir.
Step 7:
In a third bowl, add melted dark chocolate and stir.
Step 8:
Add cold heavy cream to the bowl of a food processor, beat until combined, divide into three bowls and pulse to combine.
Step 9:
Line the Easter cake pan with cheesecloth, lay out three layers of the curd mass, smooth it out, fold the edges of the cheesecloth over, place a weight on top and put it in the refrigerator overnight.
Step 10:
Turn the paskha over onto a plate and carefully remove the mold and cheesecloth.
Cooking tips
Do not boil the curd mixture; it should only become hot enough for the yolks to set.
If you don't have a food processor, use a powerful mixer.
This Easter cake must be made in a special form, otherwise such a decorative result cannot be achieved.
