Origin of the recipe
In Poland, for Easter, they bake not the kulich we're familiar with, but a paskha (Easter cake) called a baba or babka. It's usually conical rather than cylindrical, baked like a cake, and more richly decorated, truly resembling a woman in festive attire. It's loaded with eggs and butter—just the thing after a strict fast!

Step-by-step recipe
Step 1:
Heat the milk in a ladle to 33-37 degrees.
Step 2:
Crumble the yeast into the milk, add half the sugar and stir.
Step 3:
Add a few tablespoons of flour, stir, cover the dough with film and leave for 5-10 minutes.
Step 4:
Melt the butter and shortening.
Step 5:
Whisk the eggs and yolks in a double boiler.
Step 6:
Add the remaining sugar and continue stirring until dissolved.
Step 7:
Pour the warm mixture into the bowl of a food processor, add the dough and begin mixing.
Step 8:
Add flour gradually.
Step 9:
Add salt, raisins, orange zest.
Step 10:
Pour in melted butter and cooking fat.
Step 11:
Cover the kneaded dough tightly with film and leave for 30 minutes.
Step 12:
Place the risen dough into a cake pan, cover with film and let rise again.
Step 13:
Bake for about 40 minutes in an oven preheated to 175 degrees until golden brown.
Step 14:
Place the baba on a wire rack and let it cool completely while you prepare the glaze.
Step 15:
Place 2 cups of powdered sugar in a bowl, add 4 tablespoons of warm milk and whisk.
Step 16:
Add food coloring and stir.
Step 17:
Brush the baba with glaze and decorate with raisins and flaked almonds.
Cooking tips
If you don't have a food processor, you can use a powerful mixer with a dough hook, but this will take longer.
If the glaze is too thick, add a little more warm milk.
You can add food coloring of any color you like.
It is better to serve baba on a concave plate or stand, otherwise you will have to cut off the lower convex part.
