Origin of the recipe

In Poland, for Easter, they bake not the kulich we're familiar with, but a paskha (Easter cake) called a baba or babka. It's usually conical rather than cylindrical, baked like a cake, and more richly decorated, truly resembling a woman in festive attire. It's loaded with eggs and butter—just the thing after a strict fast!

Cooking tips

If you don't have a food processor, you can use a powerful mixer with a dough hook, but this will take longer.

If the glaze is too thick, add a little more warm milk.

You can add food coloring of any color you like.

It is better to serve baba on a concave plate or stand, otherwise you will have to cut off the lower convex part.

Baking Easter kulich is a long-standing folk tradition, celebrated even by those who aren't particularly religious. In the old days, village kulich looked and were baked differently; they weren't as airy and resembled a round loaf of bread. Only later did they become something of a cross between the church "artos" and the "baba" (a smaller version of which is familiar to everyone). Formed kulich with icing only appeared in urban kitchens in the mid-19th century.
