This classic Soviet squid salad with egg and onion contains a minimum of ingredients—they would only interfere with the unique flavor of these seafood gifts. The only trick is to avoid overcooking the squid, which can become too rubbery. Otherwise, even a novice can handle this delicious and filling dish.
Step-by-step recipe
Step 1:
Clean the squid carcasses from the film and internal cartilages.
Step 2:
Pour water into a saucepan, bring to a boil, add salt to taste, add the squid and cook for 2 minutes.
Step 3:
Remove the squid, rinse with cold water and remove any remaining entrails.
Step 4:
Cut the squid into strips.
Step 5:
Chop the onion very finely.
Step 6:
Boil the eggs, cool, peel carefully, cut into strips, and add to the squid and onions. Season with salt and pepper to taste.
Step 7:
Finely chop the herbs and add to the salad.
Step 8:
Season the salad with mayonnaise, mix well and refrigerate for half an hour.
Step 9:
Garnish the salad with parsley and serve.
Cooking tips
Cook the squid for no more than 2 minutes and immediately rinse with cold water to stop the cooking process, otherwise they will become rubbery.
Cook the eggs for 8 minutes from the moment of boiling and cool thoroughly under cold water.
