Origin of the recipe
This simple vegetable salad with starchy glass noodles is called Jia Liang (or "homemade") in China. Besides local wood-boring mushrooms, it's often topped with tofu sheets and lightly fried pork chops. Try the vegetarian version of this salad.

Step-by-step recipe
Step 1:
Place half a cube of dried mushrooms in a bowl and cover with hot water for 40 minutes to allow them to swell.
Step 2:
Place the glass noodles in a clean bowl and pour boiling water over them for 3 minutes, then rinse with cold water.
Step 3:
Cut carrots and cucumbers into strips and place in a bowl.
Step 4:
Finely chop and squeeze the cabbage, add to the bowl.
Step 5:
Remove the seeds from the hot peppers and add the peppers to a bowl.
Step 6:
Cut the funchose into several pieces and add it to the bowl.
Step 7:
Remove the roots from the wood mushrooms, cut the mushrooms into small pieces and add to the salad.
Step 8:
Crush and chop the garlic, add to the salad.
Step 9:
Add sugar, soy sauce, rice vinegar, vegetable and sesame oil.
Step 10:
Mix the salad.
Cooking tips
Black Chinese wood mushrooms can be purchased online or in Asian grocery stores. Pressed mushrooms, which come in boxes, are best.
If you don't remove the seeds from the chili peppers, the salad will be too spicy.
