Christmas duck in dough
Step-by-step recipe
Step 1:
Prepare the marinade: mix soy sauce, teriyaki sauce, grain mustard, crushed garlic, salt and pepper.
Step 2:
Rub the duck with the marinade on all sides. Let it marinate for 24 hours.
Step 3:
Prepare the dough: mix flour, salt and baking powder.
Step 4:
Add the egg, kefir, and water. Knead into an elastic dough.
Step 5:
Divide the dough into two pieces. Roll each half out to a thickness of 0.5 cm.
Step 6:
Place the duck on the first half of the dough and carefully cover with the second.
Step 7:
Pinch the edges.
Step 8:
Place the duck in a baking dish lined with foil.
Step 9:
Bake the duck in the oven at 200°C for 1 hour.
Step 10:
Remove the duck from the oven, unwrap the foil, and make a slit in the dough. Drain the fat and generously pour it over the dough.
Step 11:
Return the duck to the oven for another 30 minutes. Baste the dough with fat every 10 minutes.
Step 12:
Remove the top layer of dough. Brush the duck with honey and return to the oven until golden brown.
Step 13:
Remove the duck from the oven. Let it rest for 10 minutes before serving.
Step 14:
Serve the duck with a side dish.
Cooking tips
If you want a crispier crust, increase the oven temperature for the last 10 minutes.
Don't overdo it with salt, as soy sauce already contains salt.
Serve the dish immediately after cooking, while the duck is hot.
You can use other sauces instead of soy sauce.
For variety, make several marinade variations: with honey and mustard or with apples.
This duck goes perfectly with mashed potatoes or vegetables.
