Kremlin Khryapa Salad
Origin of the recipe
This vitamin-rich, savory salad, according to legend, was Brezhnev's favorite appetizer. Despite its "elite" name, the dish is made with the cheapest and simplest ingredients. Originally, "khryapa" in Rus' referred to pickled cabbage tops, but "Kremlin khryapa" is made from ordinary fresh cabbage leaves, beets, and carrots marinated in vinegar with garlic, onions, and bay leaves.

Step-by-step recipe
Step 1:
Shred the cabbage or cut it into strips as thin as possible.
Step 2:
Place the shredded cabbage in a bowl.
Step 3:
Cut the onion into half rings.
Step 4:
Add onion to the bowl with cabbage.
Step 5:
Grate carrots and beets on a Korean grater.
Step 6:
Add carrots and beets to a bowl.
Step 7:
Pour water, vinegar and vegetable oil into a ladle.
Step 8:
Add salt and sugar to the ladle and stir.
Step 9:
Add a clove of garlic and a bay leaf to the ladle.
Step 10:
Bring the marinade to a boil in a saucepan.
Step 11:
Pour the hot marinade over the vegetables. Stir.
Step 12:
Cover the bowl with cling film and put it in the refrigerator to marinate for 24 hours.
Cooking tips
The salad can be sealed in a clean jar and stored for a long time, making a stock at once and not preparing a new portion each time.
It is better to use aromatic oil with a smell - it is healthier and tastier.
The original khryapa was prepared without the use of graters, but they can be used for convenience.
