Swedish kale salad with oranges

It might seem like nothing could be more basic than cabbage and carrots, but the exotic, sunny orange adds a new summery sparkle to their flavor, not to mention the abundance of beneficial vitamins in this dish.

Step-by-step recipe
Step 1:
Grate or finely chop the cabbage.
Step 2:
Grate the carrots using a plate grater-shredder.
Step 3:
Peel the orange and remove all the white membranes from the slices.
Step 4:
Add orange slices to the cabbage and carrots.
Step 5:
Squeeze the juice from one orange and pour it into the bowl with the salad.
Step 6:
Add sugar, salt, vegetable oil and stir until the orange slices break up and mix with the vegetables.
Step 7:
Leave to soak and infuse for 15 minutes.
Cooking tips
Choose oranges with thin peels. These oranges are juicier and more flavorful.
It's easier to remove the zest and membranes if you trim one side of the orange and place it on a plate. The juice will remain on the plate and will be easier to cut out with a knife.
