Step-by-step recipe
Step 1:
In a bowl, mix adjika, mustard, oregano, meat seasoning, pepper, salt and olive oil.
Step 2:
Peel the garlic and press it into the oil with a garlic press. Mix the spices until smooth.
Step 3:
Take the loin and use a knife to separate the ribs from each other, leaving them connected by the main part of the meat.
Step 4:
Rub the loin thoroughly with the spices in oil, covering all surfaces.
Step 5:
Place the loin on a plate or in a bowl, cover with film and refrigerate for 2 hours.
Step 6:
Pour oil into a baking pan, covering the entire bottom. Place the loin on the pan and bake in the oven for 25 minutes at 180 degrees Celsius.
Step 7:
After this, reduce the oven temperature to 150 degrees and cook for another 1 hour.
Step 8:
While cooking, periodically baste the meat with the sauce that has melted from the meat.
Cooking tips
When choosing a loin, try to choose the brightest pink meat with white fat. It's tastier and fresher.
If you want the meat to be even more tender and flake easily in your hands, cook it in foil and increase the cooking time by at least 1 hour at a low temperature.
