Step-by-step recipe
Step 1:
Pour 2 tablespoons of olive oil into the frying pan.
Step 2:
Dice the onion, place in a frying pan and fry, stirring, until golden brown.
Step 3:
Add spinach to the pan and simmer for 5-7 minutes, until the leaves have reduced in volume.
Step 4:
Place the spinach and onion in a sieve and squeeze out excess liquid.
Step 5:
Chop the stewed greens with a knife and place in a bowl.
Step 6:
Add ricotta and feta cheese.
Step 7:
Add salt, pepper, grated nutmeg and stir.
Step 8:
Unfold the puff pastry package and roll it out lightly with a rolling pin.
Step 9:
Cut the dough into 10 cm wide strips.
Step 10:
Place the filling in the middle of each strip.
Step 11:
Fold the strips, press the edges and form round “sausages”.
Step 12:
Roll the snails and place them on a baking sheet lined with parchment paper.
Step 13:
Brush the snails with egg and sprinkle with white and black sesame seeds.
Step 14:
Bake for 35-40 minutes at 180 degrees.
Step 15:
Serve with salad, olives or boiled eggs, if desired.
Cooking tips
While frying the onion, do not stop stirring and do not turn the heat up too high so that it does not burn.
You can make ricotta cheese yourself from milk with the addition of lemon juice.
Don't put too much filling on the dough strips, otherwise the "sausages" may unfold.
